Chicken & Veggie Skewers

  • 1 LB Chicken Breast, cut in chunks
  • 2 Bell Peppers, cut in chunks
  • 1 Sliced Zucchini
  • 1 Red Onion, cut in chunks
  • 12 Crimini Mushrooms
  • 1 Can Pineapple Chunks
  • Rice (whatever kind you prefer)
  • Skewer Sticks
  • 1.5 Cup Pineapple Juice
  • 1/3 Cup Coco Amino (Soy Sauce)
  • 1.5 TBS Honey
  • 2 TBS Olive Oil
  • 2 TBS Minced Garlic
  • 2 TBS Ginger Oil or Minced Fresh Ginger
  1. For marinade, whisk together all ingredients in a bowl
  2. Place chicken chunks in a Ziploc bag with 1/2 of the marinade
  3. Seal and refrigerate for at least an hour (Up to a full day)
  4. Place all veggies (not pineapple) in a Ziploc bag, add other 1/2 of marinade
  5. Seal and refrigerate for at least an hour (Up to a full day)
  6. Soak Skewers in water for 30 mins
  7. Preheat grill to medium/high heat
  8. To assemble skewers, thread chicken on its own skewers and veggies and pineapple on others
  9. Spray grill with PAM spray (oil) and place skewers on
  10. Cook for 2-3 mins per side, or until chicken is cooked and veggies are roasted
  11. Enjoy with rice immediately and/or store in an airtight container in the fridge for up to a week
