Chicken & Veggie Skewers
Ingredients:
- 1 LB Chicken Breast, cut in chunks
- 2 Bell Peppers, cut in chunks
- 1 Sliced Zucchini
- 1 Red Onion, cut in chunks
- 12 Crimini Mushrooms
- 1 Can Pineapple Chunks
- Rice (whatever kind you prefer)
- Skewer Sticks
Marinade:
- 1.5 Cup Pineapple Juice
- 1/3 Cup Coco Amino (Soy Sauce)
- 1.5 TBS Honey
- 2 TBS Olive Oil
- 2 TBS Minced Garlic
- 2 TBS Ginger Oil or Minced Fresh Ginger
Directions:
- For marinade, whisk together all ingredients in a bowl
- Place chicken chunks in a Ziploc bag with 1/2 of the marinade
- Seal and refrigerate for at least an hour (Up to a full day)
- Place all veggies (not pineapple) in a Ziploc bag, add other 1/2 of marinade
- Seal and refrigerate for at least an hour (Up to a full day)
- Soak Skewers in water for 30 mins
- Preheat grill to medium/high heat
- To assemble skewers, thread chicken on its own skewers and veggies and pineapple on others
- Spray grill with PAM spray (oil) and place skewers on
- Cook for 2-3 mins per side, or until chicken is cooked and veggies are roasted
- Enjoy with rice immediately and/or store in an airtight container in the fridge for up to a week
