Spaghetti Squash
Ingredients:
- 16oz Ground Turkey
- 1 Spaghetti Squash
- 2 Cups Marinara Sauce
- 1 medium Zucchini
- 1 Cup Spinach
- 1/2 Cup Plain Greek Yogurt
- Salt & Pepper
- 1 TBS Olive Oil
- 1 TBS Minced Garlic
- 1 TBS Dried or Fresh Basil
- Mozzarella (Optional)
Directions:
- Heat olive oil and garlic in a large pot on the stove
- Chop onion and zucchini. Add to pot, cook until they start to brown
- In a seperate pan, brown turkey on medium heat
- At the same time, place whole spaghetti squah in the microwave for 5 minutes
- Add marinara sauce to pot with onions and zucchini
- Once turkey is done, add to pot
- Add basil, salt & ppper to taste
- Simmer on low
- Remove squash from microwave and cut in half (Long way) with a sharp knife (I use a bread knife) and remove seeds
- Place squash pieces face down on a large plateand mocrowave for 10 minutes
- Meanwhile, add spinach and yogurt to the pot of sauce
- Remove pot from heat
- Once done, use two forks to sgred the spaghetti squash (each half is 2 servings)
- Place a serving of spaghetti squash on a plate or in a bowl, top with 1/4 of the sauce
- Add mozzarela if you wish, and enjoy!
