Spaghetti Squash

  • 16oz Ground Turkey
  • 1 Spaghetti Squash
  • 2 Cups Marinara Sauce
  • 1 medium Zucchini
  • 1 Cup Spinach
  • 1/2 Cup Plain Greek Yogurt
  • Salt & Pepper
  • 1 TBS Olive Oil
  • 1 TBS Minced Garlic
  • 1 TBS Dried or Fresh Basil
  • Mozzarella (Optional)
  1. Heat olive oil and garlic in a large pot on the stove
  2. Chop onion and zucchini. Add to pot, cook until they start to brown
  3. In a seperate pan, brown turkey on medium heat
  4. At the same time, place whole spaghetti squah in the microwave for 5 minutes
  5. Add marinara sauce to pot with onions and zucchini
  6. Once turkey is done, add to pot
  7. Add basil, salt & ppper to taste
  8. Simmer on low
  9. Remove squash from microwave and cut in half (Long way) with a sharp knife (I use a bread knife) and remove seeds
  10. Place squash pieces face down on a large plateand mocrowave for 10 minutes
  11. Meanwhile, add spinach and yogurt to the pot of sauce
  12. Remove pot from heat
  13. Once done, use two forks to sgred the spaghetti squash (each half is 2 servings)
  14. Place a serving of spaghetti squash on a plate or in a bowl, top with 1/4 of the sauce
  15. Add mozzarela if you wish, and enjoy!
