Greek Yogurt Lemon Poppy Seed Pancakes
Ingredients:
- 2 Cups Flour
- 1/4 Cup Sugar
- 2 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- 1/2 Tsp Salt
- 2 TBS Poppy Seeds
Wet Ingredients :
- 1 Cup Plain Greek Yogurt
- 1 Cup Milk
- 1/4 Cup Melted Unsalted Butter
- 2 Large Eggs
- Zest and Juice of 1 Lemon
- 1 Tsp Vanilla Extract
Directions:
- Mix dry ingredients in a large bowl
- Mix wet ingredients in another bowl
- Whisk wet ingredients into dry ingredients
- Heat nonstick pan (no oil needed)
- Pour about 1/2 cup of batter into the heated pan
- Flip when you see several bubble
- Enjoy plain, or with whipped cream and/or syrup!
