Greek Yogurt Lemon Poppy Seed Pancakes

Ingredients:
  • 2 Cups Flour
  • 1/4 Cup Sugar
  • 2 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 2 TBS Poppy Seeds
Wet Ingredients :
  • 1 Cup Plain Greek Yogurt
  • 1 Cup Milk
  • 1/4 Cup Melted Unsalted Butter
  • 2 Large Eggs
  • Zest and Juice of 1 Lemon
  • 1 Tsp Vanilla Extract
Directions:
  1. Mix dry ingredients in a large bowl
  2. Mix wet ingredients in another bowl
  3. Whisk wet ingredients into dry ingredients
  4. Heat nonstick pan (no oil needed)
  5. Pour about 1/2 cup of batter into the heated pan
  6. Flip when you see several bubble
  7. Enjoy plain, or with whipped cream and/or syrup!
