Panzanella Caprese Salad with Bread
Ingredients:
- 7 TBS Olive Oil
- 2 TBS Butter
- 2 Cloves of Garlic, Chopped
- 12 Inch Baguette, Cut into Bite Sized Pieces (0.5 Inches)
- 2 TBS Balsalmic Vinegar
- 2 Tsp Kosher Salt or Sea Salt
- 0.25 Tsp Black Pepper
- 1 Carton Cherry Tomatoes
- 0.5 Cup Fresh Basil, Torn into Pieces
Directions:
- Preheat oven to 350
- In a small sauce pan over medium heat, combine 2 TBS olive oil, butter and garlic. Stir until butter melts, about 2 minutes
- Place baguette pieces on a baking sheet and pour oil mixture over bread, mix well
- Bake until golden brown, about 10-15 minutes
- Remove from oven and let cool
- In a large bowl, mix in remaining oil (5 TBS), balsalmic vinegar, salt and pepper. Stir in bread, basil and tomatoes
