Panzanella Caprese Salad with Bread

Ingredients:
  • 7 TBS Olive Oil
  • 2 TBS Butter
  • 2 Cloves of Garlic, Chopped
  • 12 Inch Baguette, Cut into Bite Sized Pieces (0.5 Inches)
  • 2 TBS Balsalmic Vinegar
  • 2 Tsp Kosher Salt or Sea Salt
  • 0.25 Tsp Black Pepper
  • 1 Carton Cherry Tomatoes
  • 0.5 Cup Fresh Basil, Torn into Pieces
Directions:
  1. Preheat oven to 350
  2. In a small sauce pan over medium heat, combine 2 TBS olive oil, butter and garlic. Stir until butter melts, about 2 minutes
  3. Place baguette pieces on a baking sheet and pour oil mixture over bread, mix well
  4. Bake until golden brown, about 10-15 minutes
  5. Remove from oven and let cool
  6. In a large bowl, mix in remaining oil (5 TBS), balsalmic vinegar, salt and pepper. Stir in bread, basil and tomatoes
  7. Done! Enjoy!
