Pistachio Pesto Pizza
Ingredients:
- *We got all the ingredients at Trader Joes*
- 1 Bag Plain Dough
- 1 LB Ground Italian Sausage, browned in a pan
- Spoonful of Grated Pecorino and Romano Parmesan Cheese Blend
- 1 Cup Loosely Packed Basil Leaves, sliced
- Fresh Mozzarella Balls, cut in slices
- Homemade Pistachio Pesto (Ingredients to make below)
Pistachio Pesto:
- 3 Cups Loosely Packed Basil Leaves
- 1/3 Cup Grated Pecorino and Romano Parmesan Cheese Blend
- 1/3 Cup Raw/Unsalted Pistachios
- 3 Cloves of Garlic
- 1 Tsp Sea Salt
- 1/2 Tsp Black Pepper
- 1/2 Cup Virgin Olive Oil
Directions:
- Follow instructions on pizza dough bag (let it rest)
- Preheat oven to 500
- Make Pesto: place all ingredients except olive oil in a food processor or blender
- Blend until finely chopped
- While blender/processor is still on low, slowly add in olive oil
- Divide the dough ball into two pieces and roll out onto greased cookie sheets (make it thin)
- Divide pistachio pesto between the two pizzas and spread evenly
- Place 5 or so pieces of mozzarella on each pizza
- Sprinkle half of the cooked sausage on each pizza
- Sprinkle shredded basil on each pizza
- Sprinkle a spoonful of the cheese blend on each pizza
- Bake in oven for 10-14 mins
